Continental Mushroom-Bacon Sandwich 1 lb Fresh mushrooms; cleaned and sliced
1/4 c Butter or margarine
2 tb Fresh lemon juice
2 tb Shallots or scallions; minced
3/4 ts Salt
1/8 ts Pepper
4 Slices white bread; toasted
2 c Sour cream
1 ts Dillweed
8 Strips bacon; fried crisp and halved
4 Slices tomato; halved
Sauté mushrooms in heated butter and lemon juice in a large skillet 3
minutes. Add shallots or scallions; sauté 1 minute. Mix in salt and
pepper. Spoon over toast slices, placed on a broiler tray. Top with sour
cream and dillweed, previously combined, and bacon strips. Place under a
preheated broiler 1 or 2 minutes. Serve at once on individual plates.
Garnish with tomato slices.
