French Salad Whole-Meal Sandwich 1/2 c Bottled sliced roasted red peppers; drained
1/2 Red onion; very thinly sliced
1 c Sliced Roma tomatoes
2 tb Capers
Salt and pepper
2 tb Crumbled feta cheese
1/2 c Low-calorie Italian dressing
1 Round artisan loaf halved lengthwise and scooped out
2 c Chopped romaine lettuce
In large bowl, combine peppers, onions, tomatoes, and capers. Season
with salt and pepper, then add cheese and 1/4 cup dressing. Toss
well. Pile into loaf. Top with lettuce. Drizzle with remaining
dressing. Replace top half of loaf. Wrap tightly in plastic wrap and
let stand 30 minutes.
Makes 6 to 8 servings.
