Benedictine Sandwich 2 med. cucumbers, peeled and seeded
1/2 med. onion, peeled
1 lg. (8 oz.) pkg. cream cheese, softened
Regular or homemade mayonnaise
Salt
Cayenne pepper
Green vegetable coloring
Grate cucumbers and drain well. Grate onion. Blend these into cream cheese and add enough mayo to make a soft spread. Season lightly and add drops of coloring to make a delicate green. Makes 1 1/2 cups. Don't use a blender = too runny. Makes great finger sandwiches! Also makes a great stuffing for tomatoes or mushrooms.
