Turkey Sloppy Joes

1 lb Ground turkey
1 Onion; chopped
1 Celery stalk; thinly sliced
1 cl Garlic; minced
1 c Ketchup
1 Carrot; grated or shredded
1 tb Vinegar
2 ts Sugar
1/2 ts Thyme leaves; dried
1/4 ts Black pepper
1/8 ts Mustard; dry
3 dr Hot pepper sauce
5 Hamburger buns

In a very large saucepan, combine the turkey, onions, celery and garlic. Cook over medium heat, stirring frequently, for 5 minutes, or until the turkey has changed color and the onions are soft. Add the ketchup, carrots, vinegar, sugar, thyme, pepper, mustard and hot pepper sauce. Stir to mix well. Bring to a boil. Cover, reduce the heat and simmer for 15 to 20 minutes, or until the flavors are well blended. Serve in the buns.
