Mint Sandwich

3 1/2 c. semi-sweet summer coating (if preferred you can use milk chocolate)
2 c. green summer coating (you may vary the color with holidays)
2 tbsp. either paramont crystals or vegetable shortening
Few drops of peppermint oil (approximately 6 drops per pound of candy)

Melt summer coatings in separate double boilers. Add 1 tablespoon of oil to each pot. Also add a few drops of peppermint oil into each. On a piece of waxed paper, thinly spread 1/2 of the dark summer coating. Let it partially set up (looks dry), then carefully spread the green summer coating over it. Again, wait until almost firm (looks dry), then spread the remaining dark summer coating over the top. Let set up (looks dry), then wait 10 minutes. Cut with knife or pizza cutter.
