Mint Sandwich Creams

1 c. brown sugar
1/2 c. oleo
1 tbsp. water
1 (6 oz.) pkg. semi-sweet mint flavor chocolate chips
1 egg
2 c. flour
3/4 tsp. baking soda
1/2 tsp. salt

Combine brown sugar, and margarine in pan and melt over moderate heat, stirring until the margarine melts. Remove from the heat and stir in the water and chips until the chips are melted. Cool a bit and add the rest of the ingredients. Roll in balls and flatten with a glass dipped in granulated sugar. Bake 6-8 minutes until still soft but barely a fingerprint is made when touched. Do not overbake as they will get very hard. Make a butter frosting using powdered sugar, butter, salt and a bit of hot water. Add mint flavor and green food color to this and frost the cookies putting two together to make a sandwich cookie.
