Cottage Cheese vegetable Sandwich 1/2 c Low-fat cottage cheese
2 tb Carrot, shredded
1 tb Celery, chopped
1 tb Green pepper, chopped
1 ts Onion, very finely chopped
1 ds Pepper
4 sl Bread
Mix all ingredients except bread. Spread one-half of mixture on each of 2 bread slices. Top with remaining bread.
