Toasted Omelette Sandwiches 4 sl Bread; toasted
2 ts Oil
4 Eggs; lightly beaten
Fresh herbs to garnish
4 sl Leg ham
4 sl Tasty cheese
25 g Butter
Heat oil in a pan, add half the egg mixture, tilt pan so eggs cover
base, cook until set then remove from pan. Repeat with remaining egg
mixture. Roll up omelettes, cut into 5 millimetre thick slices.
Spread butter over toast. Top with ham, omelette spirals and cheese.
Cook under a hot grill until cheese is melted.
Serve garnished with fresh herbs.
