Riviera Tomato-Tuna Sandwich 1 cn (6 1/2 or 7 oz) tuna; drained and flaked
1/2 c Chopped celery
3 tb Grated or minced onion
1 ts Anchovy paste
1/2 c Mayonnaise or salad dressing
1/2 ts Dried oregano
1 ts Salt
1/4 ts Pepper
6 Slices toasted crusty white bread or crusty white roll halves
2 tb Butter or margarine; softened
4 ts Sharp prepared mustard
4 lg Thick tomato slices
8 Slices mozzarella cheese
Paprika
Combine tuna, celery, onion, anchovy paste, mayonnaise or salad
dressing, oregano, salt, and pepper in a large bowl. Spread bread or
rolls with butter and mustard. Top each with a tomato slice, 1/4 of
the tuna mixture, and 2 slices of mozzarella cheese. Sprinkle with a
little paprika. Put sandwiches on a cookie sheet; bake in a preheated
450 degrees F oven 10 to 12 minutes, until cheese is melted.
